I made this recipe up from a deep desire to satisfy my sugar cravings during my pre-menstural phase of my cycle and to have a delicious sweet treat in the fridge for my kids that is going to fill them with all the goodness of strawberries and the good fats from coconut oil.
2 x cups fresh strawberries (washed)
3/4 cup cold pressed coconut oil (softened)
2 x cups of shredded coconut
Pinch of pink salt
1/2 teaspoon vanilla paste
3 tablespoons of maple syrup
1 tablespoon almond butter
Blitz everything together in high speed blender (except the shredded coconut). Transfer into a bowl to stir in coconut. Pour into a baking paper lined slice tin, pop in the fridge to set. Pop on the kettle and enjoy in small squares.
